The story
Port exists because England and France kept quarreling: British merchants, cut off from claret, went up Portugal's Douro Valley and fortified the local wine to survive the voyage home. The Douro was formally demarcated in 1756 under the Marquis of Pombal, making it one of the world's earliest protected wine regions. Tawny is the patient branch of the family — left in wooden casks for years or decades, where oxygen slowly trades crimson fruit for amber, fig, walnut, and caramel. The age-designated bottlings, ten through forty years, are blended to a house style by lodges in Vila Nova de Gaia that have been doing exactly this for centuries. Time, in this case, is the recipe.
