The story
The Negroni's origin story — Count Camillo Negroni asking a Florence bartender to stiffen his Americano with gin, around 1919 — is repeated everywhere and documented thinly, which is very on-brand for Italian drinking lore. The cocktail became the bartender's handshake: equal parts, no apologies, bitterness as a virtue. Reproducing it without alcohol was long considered impossible, since bitter botanicals traditionally need spirit to carry them. The recent wave of nonalcoholic aperitivi and distillates changed the math, and the zero-proof Negroni became the category's proof of concept: if you can do bitter, structured, and contemplative without proof, you can do nearly anything. It remains an adult conversation in a glass — just one you can now have twice.
