The story
Ireland has as strong a claim as anyone to inventing whiskey — the word itself descends from uisce beatha, Irish for "water of life" — and by the nineteenth century Irish whiskey ranked among the most popular spirits on earth. Then came catastrophe in installments: trade war with Britain, American Prohibition closing its biggest export market, and decades of decline that left the whole island with only a couple of operating distilleries by the late twentieth century. The revival since has been remarkable, with dozens of distilleries now running and more building. The traditional house style — triple distillation and unpeated malt — yields the smoothness the country is famous for. Hospitality, in other words, that you can pour.
